Crustless Quiche


Ingredients:

  • 4 Eggs

  • 1 cup sour cream

  • 1 cup small-curd cottage cheese

  • 1/4 cup gluten free rice flour

  • 1 /4 teaspoon salt

  • 2 cups grated cheddar cheese

  • 1/2 cup diced ham


Instructions:

  1. In a large bowl, blend eggs, sour cream, cottage cheese, gluten-free rice flour, salt.

  2. Stir in grate cheddar cheese and ham.

  3. Pour into 9" or 10" quiche dish or deep pie plate sprayed with Pam or greased lightly.

  4. Heat Preheat oven to 350 degrees.

  5. Bake for 45 minutes or until knife inserted near center comes clean .

  6. Let stand for 5 minutes before cutting.

  7. Makes 6 servings


Lunch: Satisfying Midday Meal.

Spring Salad


Ingredients:


Salad

  1. 1 cup slivered almonds

  2. 12 ounces mixed spring greens

  3. 16 ounces strawberries washed, hulled, and sliced

  4. 4 ounces crumbled goat cheese


Lemon Honey Vinaigrette

  1. 1/2 cup extra virgin olive oil

  2. 5 tablespoons freshly squeezed lemon juice

  3. 2 tablespoons honey

  4. 1/4 teaspoon sea salt, additional to taste

  5. Freshly ground black pepper to taste


Instructions:


  1. Preheat oven to 350 degrees

  2. Spread slivered almonds on sheet pan and bake for 5 to 7 minutes, or till light brown. Set aside to cool.

  3. To prepare the vinaigrette, measure all of ingredients into a sealed container, bowl or blender, till all ingredients are combined thoroughly .

  4. To assemble the salad, layer the mixed greens, sliced strawberries, toasted slivered almonds, and crumbled goat cheese in a large bowl.

  5. Just before serving, dress with your desired amount of Lemon Honey Vinaigrette and toss until salad ingredients are evenly coated.

  6. Makes 8 servings.


Dinner: Hearty and Flavorful



Dinner is the perfect time to enjoy a hearty meal. Here is gluten-free dinner recipes that is sure to please.


Greek Sheet Pan Chicken


Ingredients:

  • 1/4 cup extra virgin olive oil

  • 3 cloves garlic, minced

  • 1/2 teaspoon salt

  • 1/2 red onion, sliced into 1" squares

  • 1 lemon, sliced into rounds

  • 1/2 cup feta cheese

  • 2 tablespoons balsamic vinegar

  • 1 teaspoon oregano

  • 2 bell peppers (red, orange, and yellow) , sliced into 1" squares

  • 1 1/2 cups cherry tomatoes

  • 4 boneless chicken breasts

  • 1/2 cup pitted kalamata olives

  • 1/2 cup fresh basil chopped

  • 1 14 once can of whole artichokes, drained


Instructions:

  1. Preheat oven to 400 degrees

  2. Add the olive oil, balsamic vinegar, garlic, oregano, and salt into a small bowl. Whisk them together and set aside.

  3. Place peppers, onion, tomatoes, and artichokes on a rimmed baking sheet, Drizzle with 1/2 the olive oil mixture and toss to coat

  4. Nestle the chicken breasts between the vegetables on the baking sheet. Coat the chicken breasts with the remaining olive oil mixture. Place the lemon slices surrounding the chicken.

  5. Place the pan in the oven and bake for 25 minutes.

  6. Remove the baking sheet and add the olives and feta cheese. Bake an additional 10 minutes.

  7. Remove baking sheet and garnish with basil.

  8. Makes 4 servings

Cheesecake with Raspberry Sauce


Cheese Cake

Ingredients:

  • 2 packages (8 ounces each) cream cheese softened

  • 3 eggs

  • 1 cup sugar

  • 1 teaspoon almond extract


Raspberry sauce

Ingredients:

  1. 1 cup fresh or unsweetened frozen raspberries

  2. 1 teaspoon almond extract

  3. 2 tablespoons sugar

  4. 1/2 cup sour cream


Instruction:

For cheesecake:

  1. Blend cream cheese, eggs, sugar, and almond extract with electric mixer and pour into a buttered 9" pie plate.

  2. Bake at 325 degrees for 40 to 45 minutes.

  3. Let cool.


For Sauce:

  1. Place raspberries, almond extract, sugar, and sour cream in blender or food processor and blend until smooth.

  2. Spoon over individual cheese cake slices just prior to serving.

  3. Makes 8 servings
